It’s the same reason we pair certain cheese with certain wine. For beer, while there are food pairings, the seasonality is based on A LOT of breweries testing how weather (seasons!) influence our taste buds and mood. Technically, you could brew any type of beer at any time during the year. For example, I could use canned pumpkin to make a pumpkin stout in July. But it won’t taste as good as using a real pumpkin, roasted with brown sugar, in colder weather.
